We know that sometimes new moms find it hard to find time to make a great dinner. (Sometimes it is hard to just get a shower, right?)
We can relate!
Before I had my first child, it was easy to take my time and make a nice dinner. As each child was added, it became a more and more difficult task. I had to juggle breastfeeding, housework, and homework? Yikes!
I have learned that two things are a new mom's best friend:
* The oven timer (that starts and stops the oven at a later time.)
AND* The Crockpot (yes...you will want one of these!)
If you plan ahead, start early, and have easy recipes like these--dinner will no longer be so hard (and you won't have to order pizza out either!)
Featured Chicken Recipe
Daddy’s Favorite Chicken
5 Chicken breasts (amount can vary to your family's size)
2 cans cream of chicken soup
1 envelope dry italian dressing mix
1 pkg. low fat cream cheese
Line outer edge of crockpot with chicken breasts. Put the soup in the middle. Break up the cream cheese into about 8 pieces and put on top of the soup. Sprinkle Italian Dressing Mix over everything. Cook on low for 6-8 hours.
Excellent meal served with over potatos or rice…with corn and a salad!

Mama's Best Meatloaf
2 pounds of ground chuck 1/2 to 1 cup of Italian bread crumbs 2 eggs 2 tsp. of oregano 2 tsp. of thyme 2 tbsp. of Worcestershire sauce 1 1/4 cup water 1 packet Au Jus Gravy mix (the kind that makes a 3-cup batch.)
Take the ground chuck and put into a mixing bowl. Add Italian bread crumbs. Crack 2 eggs into the bowl, and sprinkle with 1 tsp. of oregano, 1 tsp. of thyme, and 1 tbsp. of Worcestershire sauce. If desired, add up to 1/4 cup water.
Now the “secret” ingredient: put in ½ packet of Au Jus Gravy mix! Smash it together, and shape it into a round, ball shape -- basically the size of the crockpot, leaving about 1" on each side. Make sure to pat it firmly, so it doesn't fall apart.
Put into the crockpot.
Take the other half of the gravy mix, put into another, smaller mixing bowl, and add 1 cup water, along with 1 tsp. of oregano & thyme each, and 1 tbsp. of Worcestershire.
Mix it all up well, then pour over the meatloaf in the crockpot.
Cover it set to Low and it will be ready in 8-10 hours…whenever you are ready for dinner!
Serve with rice or mashed potatoes, and a fresh vegetable!
Best Roast Around
1 envelope dry ranch dressing mix 1 envelope dry Italian dressing mix 1 envelope dry Brown gravy mix 1 cup water 2~3 lb beef roast 2 medium onions, sliced 1 1 lb bag baby carrots 2 lbs small red potatoes
Place ½ of the onions and then the roast a crock pot. Then the dry ingredients and water. Place the veggies on the top. Cook on low approximately 8 hours.
I serve this with salad and bread for a perfect meal!
